Mmmm... Cookies


Peanut Butter Cookies
Recipe:
  • 1/2 cup butter or margarine
  • 1/2 cup peanut butter (I find that Peter Pan peanut better is the best for this recipe)
  • 1/2 cup granulated sugar (I don't scrap off extra sugar from the measuring cup)
  • 1/2 cup brown sugar or 1/4 cup honey (I would stick with brown sugar)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • Granulated sugar

Directions:
  1. In a large mixing bowl beat the butter or margarine and peanut butter with an electric mixer on medium to high speed for 30 seconds. 
  2. Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat till combined, scraping sides of bowl occasionally. Beat in the egg and vanilla till combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. If necessary, cover and chill dough till easy to handle (I do not chill).
  3. Shape dough into 1-inch balls. Roll in additional granulated sugar, (I just sprinkle some on top of the cookie).
  4. Place 2-inches apart on an ungreased cookie sheet. Flatten by making crisscross marks with tine lines of a fork.
  5. Bake in a 375 degree oven for 7 to 9 minutes or till bottoms are lightly browned. Transfer cookies to wire rack and let cool.

This recipe seems to be everyones favorite. We have a good friend who puts in his request for my peanut butter cookies each year... he likes them that much.

Definitely "mmm" worthy! I mean, there's peanut butter in there and honey. That's a great ingredients list.
